Kale Caesar Salad with Chickpea Croutons

I find I have a harder time eating salads in the winter, I find green leafy veggies to be quite cooling and will usually try to incorporate them into my stews or soups. Then I saw this the Crowd Pleasing Vegan Caesar Salad on Oh She Glows and it looked to good to not try it. Naturally, given that I am a rebel that cannot follow recipes and directions I adjusted a few things along the way.

This salad is so comforting, with roasted chickpeas in lieu of croutons and a lovely, hearty cashew dressing. This salad packs tons of fiber via the kale, lettuce and chickpeas which also add protein alongside the hemp seeds and cashews.

Instructions
  1. 1.Season chickpeas with smoked paprika, salt, pepper and olive oil then roast them in the oven until they turn golden.
  2. 2.For the dressing blend all ingredients while gradually adding water until the dressing is smooth and fluid.
  3. 3.Chop the kale and massage with a pinch of salt until tender, add chopped lettuce. Dress the salad with roasted chickpeas, nutritional yeast and hemp seeds.
